Looking for Vegetarian Mango Recipes


So in addition to the papaya, I also bought a mango and am now looking for a recipe to use it for.

So far, I'm considering a thai mango salad (since I friggin love Thai food) or this rice and mango salad.

Got any other ideas for me? Please post them in the comments. I'm looking for a meal, salad, or something substantial rather than a drink.

Also, the mango I bought is yellow on the outside rather than red and green. Can anyone tell me the difference?

    If the yellow mangoes you bought look like the ones in the picture above, they are champagne mangoes--lighter-colored flesh and MUCH more tart than the larger ones. I LOVE mangoes, but I don't do much cooking with them per se, or use them in savory dishes much. I mostly eat them alone, or with other fruit (strawberries and/or blueberries and mangoes go well together). I also like the larger, sweeter mangoes cubed and mixed with cottage cheese for breakfast sometimes.
    There is always mango salsa, for a savory way to eat them. And this salsa would go well with fish (or chips)--never made it, but it's basically cubed mango, chopped cilantro, and finely diced jalapeno/other chile (but I'm sure you could find several recipes for it online).

  3. No mango receipes sorry cuz we just eat it plain although I like mango salsa.

    The different colored mangoes are different varieties. I like the red/green ones b/c they have more flesh. You get more for your $$. Never really go for the yellow ones b/c by the time you cut out the seed, you have very thin slivers of mangos
